Mother's Day Brunch Croissant Croque Madame


We teamed up with our friends at Churn to create a decadent, but mindful Mother's Day Brunch recipe. Starting with a Hero Croissant as the base with a Brown Butter Bechamel Sauce using the new Churn Brown Butter, this stacks up to a rich and filling sandwich, topped with a perfectly fried egg.

Preheat oven to 425° F. Line a baking tray with parchment paper.

Melt approximately 5 tbsp Churn Brown butter in a medium saucepan over medium heat. Add flour and milk.

Whisk all ingredients together.

Remove from heat and then add Dijon mustard and nutmeg.

Slice Hero Croissants in half lengthwise.

Top each of the halves with Brown Butter Bechamel, Gruyere and Parmesan Cheese and Ham.

Top each sandwich with the top half of the croissant and then add more sauce and remaining cheese.

Bake until brown, roughly 5-7 minutes.

While sandwiches bake, heat a large skillet over medium-high heat. Grease the pan with remaining Churn Brown Butter and crack eggs into hot pan.

Cook egg until desired doneness.

Place egg on top of croissant sandwich and enjoy!
