Cook the sausage: In a small skillet on medium high heat, add the sausage. Cook until it browns and gets crispy, 8-10 minutes. Option to deglaze with dry white wine. Set aside

Cook the noodles: Cook the noodles according to the al dente package instructions. Reserve some pasta water.

Make the sauce: Heat olive oil in a skillet on medium heat. Add shallot and the Cajun spice blend and cook for 2 minutes. Add the red bell pepper and tomato paste and cook for another 2 minutes. Lower the heat and add oat milk and cream cheese, stirring until smooth. Add 1 cup shredded cheese and stir until it melts into the sauce.

Add noodles: Add cooked noodles to the sauce with some pasta water, stirring until glossy and coated. Taste and add the rest of the shredded cheese and salt, if needed. Remove from heat and stir in chopped parsley. Serve with crispy sausage and grated vegan Parmesan.
