Pico de Gallo:
Finely dice the red onion, tomato, and pepper.
Drizzle olive oil and squeeze a lemon. Add salt. Let it sit for 30 minutes.
In a bowl, mix all the ingredients for the sauce.
In a pan on medium-high heat, drizzle olive oil. Toast the buns.
Cook the sausage.
Add sauce to the buns. Add a sausage. Top with pico de gallo.
