Hot Honey Harissa Cheese Egg Tortilla

In a bowl combine eggs, egg whites, and harissa with salt and pepper. Beat until combined.

Heat a small-medium sized skillet on medium heat with avocado oil. Pour the egg and harissa mixture over it and cover so eggs gentle cook.

After a few minutes, once you see the eggs cooking, add turkey slices, spinach, and drizzle of hot honey.

Place the tortilla over the entire mixture then cover to allow everything to cook more (about 2 minutes).

Once the eggs are cooked, flip the entire thing so the tortilla is on the bottom then fold it in half. Leave one half cooking to crispy up for about 3 minutes, then flip so the other half crisps up.

Remove from the pan and top with chopped green onion!
