Add all the chickpea salad ingredients in a bowl (chickpeas, red onion, mustard, parsley, capers, celery) and mash with a masher until you reach a creamy consistency. Taste salad and season as needed.

Spread the chickpea salad on the bottom slice. Top with the veggies (spinach, microgreens, carrots, cucumber). Add the top bread slice. Enjoy!
