Prehead the oven to 350 degrees F and spray a 2-quart baking dish with oil.

Bring a pot of salted water to boil. Add elbow macaroni and cook until the noodles are al dente (approximately 10 minutes). Drain and set aside.

Reserve ¼ cup of each cheese to use as a topping after the first baking stage.

In the pan used to cook the pasta, melt the butter and whisk in the flour. Stir over medium heat until the butter is foamy.

Slowly add the milk, stirring until sauce thickens.

Remove from the heat and stir in the cheddar, smoked gouda and parmesan cheeses along with the cooked and mashed butternut squash.

Add the nutmeg, hot sauce, salt and pepper and stir.

Combine the sauce with the pasta in your 2-quart baking dish.

Cover dish with foil and bake for 20 minutes.

Remove foil. Top with reserved cheese and return to oven for an additional 15 minutes (or until hot and bubbly around the edges).
