Basil Pesto Penne

Bring a pot of salted water to boil. Add Hero Noodles™ Penne and cook until al dente (12-16 minutes).

Drain pasta (reserving 1 cup of pasta water), and add to a large bowl. Set aside.

Toast the pine nuts in a small sauté pan over low heat.

Add the basil, garlic, lemon juice, parmesan cheese and pine nuts to a food processor and pulse on high speed until finely chopped.

Add in half of the Pecorino Romano cheese and salt and pepper and pulse on high speed while drizzling in the olive oil until it becomes emulsified.

Place the pesto into the penne noodles, along with a 1/3 cup of the pasta water (adding more if needed for desired consistency). Salt and pepper pasta and mix well.

Garnish with remaining fresh shredded Pecorino Romano cheese and serve.

Add penne to sauce and mix well. Serve immediately.
